Paying for insurance
Paying for insurance, year after year, doesn't yield any benefits.... right up until the time when you have the accident.
It's tempting to stop paying and save the money because under normal circumstances, it is statistically unlikely that things will go wrong.
The same thing goes for those working practices that you stopped doing because they were time consuming, annoying and pointless: things are running just fine, why waste time and energy on what doesn't help the team or the project?
Because eventually the moons will align, your world will crack and being persistent with 'useless' processes is what is going to save your project, your team and your reputation.
